I don't know the root of the problem. However, when I drag files from my mail client (MailMate) to a folder, those files are now locked, which is super annoying because I can't do anything with the file.
That was not the case in NC 1.3
* Does NC apply the lock? If, how to avoid this?
* Is there a shortcut to unlock a file?

Hm, NC definitely doesn't do anything by itself to lock the files dragged into it.
IIRC nothing changed regarding dealing with locked files in v1.4, so not sure why there's a difference now.
You can unlock the files manually in NC of course: Ctrl+A -> uncheck "Immutable" -> Enter.
There's no specific hotkey to perform this operation in one go though.

Ok, that's what I expected. A shortcut would be nice

Yes, seems to be a new feature to protect against accidentally changing attachments. I don't have any idea how someone can/wants to do this but anyway... You can set to true and things work as expected.
